<div>Reteta pentru 600 ml</div>

<div>2 linguri otet de vin alb<br />
2 linguri apa<br />
1 lingurita piper alb, macinat grosier<br />
3 linguri tarhon tocat grosier<br />
2 salote tocate<br />
4 galbenusuri de ou<br />
250 g unt nesarat, clarificat<br />
zeama de la o jumatate de lamaie<br />
1 praf de piper cayenne<br />
1 lingura hasmatuchi tocat</div>

<div>Se pun otetul, apa si piperul alb intr-o tigaie cu fund gros si se aduc la temperatura de fierbere. Se face focul mai mic si se fierbe 1 minut, sau pana s-a redus cu o treime. Se adauga 2 linguri de tarhon tocat si salotele si se amesteca bine.<br />
Se ia tigaia de pe foc si se lasa sa se raceasca, apoi se strecoara lichidul intr-un castron rezistent la temperatura. Se adauga galbenusurile si se amesteca bine.<br />
Se pune castronul deasupra unui vas cu apa care fierbe; baza castronului trebuie sa fie deasupra nivelului apei. Se amesteca bine 5-6 minute, sau pana cand sosul se ingroasa si devine cremos si omogen.<br />
Se pune castronul pe un prosop de bucatarie umed. Incet si treptat, se adauga untul clarificat, turnandu-se in fir subtire si amestecandu-se pana cand sosul este lucios si gros.<br />
Se adauga zeama de lamaie, apoi se asezoneaza cu sare, piper alb si piper de cayenne. Se amesteca 1 lingura de tarhon tocat si 1 lingura de hasmatuchi. Se serveste imediat.</div>

<div>Sosuri pe baza de sos bearnez</div>
<div>Sos balsamic – Se inlocuieste jumatate din otetul de vin alb cu otet balsamic, apoi se adauga 1 lingurita de otet balsamic la sosul complet preparat, in locul zemei de lamaie. Este ideal cu peste sau carne, fripte sau la cuptor.</p>
<p>Sos Choron – Se adauga 2 linguri de sos de rosii, bine redus, la reteta de baza. Sosul de rosii trebuie sa fie gros si bine redus, altfel va subtia prea mult sosul bearnez de baza. Se poate folosi si passata, bine redusa. Choron se potriveste cu fripturi de miel, pui sau vita.</p></div>

<div><span>Indicatii</span><br />
Se gateste mazarea in apa cu putina sare si cu zahar, timp de 8-10 minute, dau pana ce se face frageda. Se scurge bine.<br />
Intre timp, se incinge uleiul intr-o tigaie mare si se calesc ceapa si srdeii iuti tocati pana ce ceapa incepe sa se rumeneasca. Se adauga baconul si se continua 4-5 minute, amestecand frecvent.<br />
Se adauga rosiile tocate si se gateste inca 2-3 minute, la foc mic. Se adauga mazarea si se incinge mixtura. Se asezoneaza dupa gust.<br />
Se pune mancarea intr-o farfurie si se orneaza cu ardei iuti murati.</div>

Asadero (in spaniola inseamna &#8220;copt&#8221;) mai este numita in Mexic si Oaxaca. Este o branza din lapte de vaca, destul de moale, dulce. Numele ii vine de la statul mexican Oaxaca, unde este produsa.<br />
Se topeste foarte bine. Este comercializata sug forma de bile, cercuri, colaci de diferite marimi si greutati.</p>

Este o branza italieneasca semi-fina, cu aroma bogata, de nuca. Este preparata din lapte de vaca si este ambalat sub forma de roti mici, cu coaja lucioasa. Interiorul este galben, cu multe gaurele mici. Asiago proaspata este folosita ca o branza de masa; daca are un an vechime, devine foarte tare si este potrivita pentru a fi rasa.</p>

<div>Se topeste untul intr-o tigaie, la foc mediu. Se mareste flacara si se adauga carnea si se rumeneste rapid pe ambele parti. Se asezoneaza cu sare si piper si se scoate din tigaie.</div>

<div>In aceeasi tigaie, la foc mediu, se caleste ceapa 2 minute, apoi se scoate, se pune in acelasi vas cu carnea si se lasa deoparte.</div>

<div>Se adauga alte 3 linguri de unt in tigaie, se mareste flacara si se adauga ciupercutele. Se gateste, amestecand, timp de 4 minute. Se presara nucsoara si tarhonul si se amesteca bine.</div>

<p><strong>1. Pentru prevenirea atacurilor cerebrale, beti ceai verde. Consumat in doze regulate, ceaiul pevine depozitarea grasimilor pe peretii arteriali. De fapt, va taie pofta de mancare si pastreaza greutatea in limite normale. Ceaiul verde este ideal pentru sistemul imunitar.</strong></p>

3. Febra mare? Consumati mult iaurt in timpul iernii; previne si crizele alergice la polen. Consumati miere “locala” zilnic.</strong></p>

4 .Impotriva astmului, consumati ceapa! Va ajuta prin faptul ca usureaza circulatia pe tuburile bronhice. Se practica aplicarea de pachetele cu ceapa pe piept,usurand respiratia. Cu mirosul va descurcati…la nevoie.</strong></p>

<div class="anghinare"><span class="titlu">Anghinare</span><br />
<img class="pozeStanga" src="http://www.condimenteweb.ro/images/artichokes.jpg" alt="" /> Acest &#8220;ciuline comestibil&#8221; se serveste umplut sau simplu, de obicei cu unt cald, sos hollandaise, maioneza sau vinegreta. Rupeti cu mana o foaie din anghinare, si scoateti cu dintii pulpa comestibila (tineti de varful ascutit si muscati din partea carnoasa).<br />
Daca anghinarea este insotita de unt cu lamaie sau de vinegreta, se inmoaie partea de la baza frunzei in sos, apoi se musca rapid din ea, ca sa nu se scurga sosul.<br />
Daca e vorba de un sos mai consistent, frunza se poate folosi ca o lingurita. Daca anghinarea este umpluta, se rupe o frunza si umplutura se intinde pe ea cu cutitul.<br />
Frunzele mai subtiri din interior se arunca. Puteti folosi furculita in mana stanga pentru a tine anghinarea pe farfurie, in timp ce cu mana dreapta rupeti frunzele. Astfel ajungeti la centrul violet al anghinarei, care nu se mananca. Dupa ce il scoateti, ramaneti cu &#8220;inima&#8221;, partea cea mai buna a acestei legume. Inima se poate taia in bucati si manca pur si simplu, sau se poate inmuia in sosul servit alaturi.</div>
<div class="caviar"><span class="titlu">Caviar</span><br />
<img class="pozeDreapta" src="http://www.condimenteweb.ro/images/caviar.jpg" alt="" /> Daca este servit intr-un bol sau castron, cu o lingura alaturi, luati caviarul cu lingura si puneti-l in propria farfurie. Pe masura ce sunt aduse la masa, folositi lingura de servit si puneti in propria farfurie cantitati mici de ceapa tocata, felii de lamaie si feliute de paine prajita.<br />
Puneti cu cutitul unt si caviar pe painea prajita (sau biscuit), apoi mancati cu mana.<br />
Daca sunteti la o receptie, si se servesc tartine cu caviar de pe tavi, pur si simplu luati una cu mana si mancati-o.</div>

<div class="branza"><span class="titlu">Branza</span><br />
<img class="pozeStanga" src="http://www.condimenteweb.ro/images/branza.jpg" alt="" /> Ca apertitiv, branza se intinde pe paine prajita sau biscuit, cu cutitul care insoteste fiecare fel.<br />
Cand branza se serveste cu salata, o puteti intinde pe paine sau pe biscuit fie cu furculita, fie cu cutitul. Alternativa este sa puneti cu furculita o bucata de branza pe farfurie, si sa o mancati cu o frunza de salata verde. Branzele moi, cum ar fi Brie sau Camembert, se intind intotdeauna cu cutitul de salata sau de unt.<br />
Branzele de desert, servite cu fructe, sunt cel mai simplu de mancat: taiati si/sau curatati marul sau para, apoi mancati branza cu furculita, si fructul fie cu furculita, fie cu mana. Se mananca alternativ: o inghititura de branza, una de fruct.</div>

<div class="pate"><span class="titlu">Pate</span><br />
<img class="pozeDreapta" src="http://www.condimenteweb.ro/images/pate.jpg" alt="" /> Pateul poate aparea fie inainte de felul principal, fie odata cu salata, in cursul mesei. Daca este servit la cocktail (sau ca aperitiv), intindeti-l in strat gros pe biscuiti sau felii de paine prajita, care se mananca cu mana. Daca se serveste odata cu salata, poate sosi la masa intr-un bol, sau asezat pe o farfurie, in forma de inel. In acest caz, luati o felie, sau puneti o lingura in farfuria proprie, impreuna cu un biscuite sau o felie de paine prajita.<br />
Pregatiti-va cu cutitul o tartina, pe care o mancati apoi cu mana. Deseori alaturi de pateu se servesc castraveciori acri; acestia se mananca cu furculita.</div>

<div class="creveti"><span class="titlu">Cocktail de creveti</span><br />
<img class="pozeStanga" src="http://www.condimenteweb.ro/images/cocktailCreveti.jpg" alt="" /> Daca vi se servesc creveti de dimensiuni mari intr-un pahar cu picior, se infige furculita in ei si se musca cate o inghititura, dupa ce inmuiati crevetele in sos.<br />
Este prea greu sa ii taiati cu cutitul in pahar. Daca, in schimb, vi se servesc creveti mari pe farfurie, ii puteti manca taindu-i cu cutitul si folosind furculita.</div>

<p><span class="titlu">Supe</span><br />
<img class="pozeDreapta" src="http://www.condimenteweb.ro/images/supa.jpg" alt="" /> Supa se poate servi fie in farfurie de supa (adanca), fie intr-o cana, in functie de tipul de supa si de cat de protocolara e masa.<br />
Supele limpezi se servesc deseori in cani de consommé (mici si cu doua toarte). Puteti testa temperatura supei cu lingura, apoi puteti bea din cana, ridicand-o la gura cu amandoua mainile. Legumele sau taiteii ramasi pe fundul canii se pot manca cu lingura. Bolul de supa-crema (si el tot cu doua toarte) este mai mare decat cana de consommé. Puteti bea supa din bol, sau puteti folosi o lingura. In ambele cazuri, dupa ce ati terminat puneti lingura pe farfuria de dedesubt, la dreapta bolului.<br />
Cand se foloseste o farfurie, luati cu lingura din partea indepartata a farfuriei. Cand ajungeti la fundul farfuriei,o puteti inclina usor, intotdeauna catre interiorul mesei. Cand folositi lingura de supa, sorbiti de pe lateral, si nu bagati niciodata intreaga lingura in gura.<br />
Crutoane sau biscuitii de dimensiuni mici se pot adauga in supa intregi, nu mai mult de 4-5 odata. Biscuitii mari se mananca separat.<br />
Supa nu se soarbe niciodata cu zgomot.</p>

<p>La omleta-gigant au muncit 100 de bucătari care au amestecat 30.000 de ouă cu 15 kg de sare, 1.500 kg de cartofi, 200 kg de costiţă, 200 kg de caşcaval şi 150 kg ceapă uscată. În acest fel, bucătarii speră ca omleta lor să intre în Cartea Recordurilor. Competiţia dintre bucătarii amatori continuă şi astăzi cu proba de gătit la grătar şi ceaun. Toate preparatele vor fi distribuite gratis celor prezenţi.</p>

<div class="text">Se prepara umplutura. Se pun stafidele intr-un castron. Se incinge uleiul intr-o tigaie mare, se adauga ceapa si usturoiul si se calesc 5 minute, pana se inmoaie.</div>

<div class="text">Se adauga cuisoarele si scortisoara, apoi carnea de porc tocata. Se gateste, amestecand, pana ce tocatura este rumenite. Se adauga zeama de carne. Se da in clocot, se micsoreaza flacara si se fierbe incet, amestecand frecvent, 20 de minute.</div>

<div class="text">Cat timp fierbe carnea de porc, se decojesc rosiile. Se fac doua taieturi, in cruce, in partea inferioara a rosiilor, dupa care se pun intr-un castron. Se toarna peste ele apa clocotita, cat sa fie acoperite. Se lasa 3 minute, dupa care se scot cu o spumiera si se plonjeaza intr-un castron cu apa rece. Se tin 20 de secunde, apoi se scurg si se decojesc, incepand de la taieturile in cruce unde coaja se desprinde usor.</div>

<div class="text">Se adauga rosiile si migdalele in mixtura de carne tocata, apoi stafidele si vinul. Se amesteca si se gateste pana ce sosul s-a ingrosat. Se lasa sa se raceasca.</div>

<div class="text">Se incalzeste cuptorul la 180 °C. Se deschide pulpa de porc si se asezoneaza umplutura din tigaie cu sare si piper. Se intinde umplutura peste pulpa desfacuta, astfel ca sa se obtina un strat cat mai uniform.</div>

<div class="text">Se ruleaza pulpa cu grija si se leaga cu sfoara. Se cantareste ruloul ca sa se calculeze timpul necesar pentru a fi gatita in cuptor. Se calculeaza 30 de minute la fiecare 500 g, la care se adauga alte 30 de minute. Pentru o pulpa de 1,5 kg, timpul este de 2 ore. Se pune pulpa pe o tava de copt, se asezoneaza cu sare si piper si se gateste conform timpului calculat. Cand este gata, se transfera pe un platou, se acopera lejer cu folie si se lasa 10 minute, la odihna, dupa care se taie feii si se serveste alaturi de cartofi facuti la cuptor.</div>

<div class="text">Se pune codul intr-un castron mare si se acopera cu apa rece. Se lasa la inmuiat timp de 24 de ore, schimband apa de cel putin 5 ori in acest interval.</div>

<div class="text">Se scurge codul si se indeparteaza pielea, folosind un cutit ascutit. Se desface carnea bucatele nici, folosind 2 furculite, dupa care se pune intr-un castron si se lasa deoparte.</div>

<div class="text">Se incinge jumatate din ulei intr-o tigaie mare, neaderenta. Se adauga ceapa si se caleste la foc mediu pana ce s-a inmuiat si s-a facut transparenta. Se scoate ceapa din tigaie si se pune deoparte, cu ulei cu tot, caci va da gust mancarii si nu trebuie aruncat. Se adauga restul de ulei in tigaie si se incinge. Se adauga apoi usturoiul si se caleste 2 minute.</div>

<div class="text">Se adauga rosiile, cu suc cu tot, si se gatesc, la foc mediu, timp de 20 de minute, amestecand ocazional, pana ce mixtura s-a ingrosat.</div>

<div class="text">Intre timp, se pun fulgii de migdale, intr-un singur strat, intr-o tigaie mare. Se prajesc la foc mediu timp de cateva minute, scuturand tigaia si amestecand cu o spatula de lemn sau teflon, astfel ca sa se rumeneasca uniform. Atentie sa nu se arda.</div>

<div class="text">Se adauga peste migdale feliile de ardei iute si maslinele umplute. Se adauga si fulgii de peste, amestecand cu grija. Se gateste 20 de minute, amestecand ocazional, pana ce mixtura este aproape uscata. Se asezoneaza dupa gust, se adauga patrunjel si se mai gateste 2-3 minute. Se orneaza cu patrunjel si se serveste in farfurii calde, alaturi de paine cu coaja crocanta.</div>
