<div><span>Indicatii</span><br />
Se gateste mazarea in apa cu putina sare si cu zahar, timp de 8-10 minute, dau pana ce se face frageda. Se scurge bine.<br />
Intre timp, se incinge uleiul intr-o tigaie mare si se calesc ceapa si srdeii iuti tocati pana ce ceapa incepe sa se rumeneasca. Se adauga baconul si se continua 4-5 minute, amestecand frecvent.<br />
Se adauga rosiile tocate si se gateste inca 2-3 minute, la foc mic. Se adauga mazarea si se incinge mixtura. Se asezoneaza dupa gust.<br />
Se pune mancarea intr-o farfurie si se orneaza cu ardei iuti murati.</div>

Interiorul este galben, cu multe gaurele mici. Asiago proaspata este folosita ca o branza de masa; daca are un an vechime, devine foarte tare si este potrivita pentru a fi rasa.</p>

Wok-urile sunt in mod traditional facute din otel laminat, ceea ce ofera un control excelent asupra temperaturii; se mai pot face si din tabla de otel, aluminiu inoxidabil sau otel inoxidabil.<br />
Exista wok-uri de diverse dimensiuni, de obicei au doua manere, si in general sunt insotite de un suport in forma de inel, care se pune pe flacara aragazului. Exista si wok-uri cu fundul plat, care se folosesc pe plitele electrice.</p>

Zaharul brun este zahar alb cu melasa. Cele mai cunoscute feluri sunt urmatoarele: zahar brun deschis si inchis. De obicei, cu cat e mai deschis, cu atat este mai delicata aroma. Cel inchis, de moda veche, are o aroma de melasa mai intensa.<br />

Insa pentru a deveni o arta, gastronomia trebuie sa se bazeze pe gastrotehnie&#8230;</span></p>
<p>Gastrotehnia este stiinta care ne invata cum sa pregatim alimentele fara sa le distrugem proprietatile ori sa le saracim in factori nutritivi. Considerata ramura a nutritiei, ea studiaza toate transformarile suferite de alimente in cursul prepararii lor, prin diverse tehnici culinare, precum si influenta acestor transformari asupra starii de sanatate a individului. La nivel mondial, cerintele nutritionale si de sanatate pentru alimente redefinesc comportamentul alimentar actual, prin modul stiintific si igienic de preparare a hranei.</p>
<p><span> Lectia de gastrotehnie ne invata ca practicile culinare pot &#8220;imbolnavi&#8221; alimentul, transformandu-l intr-un drog modern sau, dimpotriva, il pot insanatosi, recomandandu-l ca pe un medicament viu, capabil sa vindece organismul printr-o adevarata &#8220;transfuzie de sange vegetal&#8221;. </span></p>
<p>Tehnicile culinare propuse de gastrotehnie trebuie sa faca alimentele mai usor de digerat (marirea digestibilitatii) si sa le confere acestora un aspect placut si un gust excelent (marirea sapiditatii). Fara sa le transforme in substante iritante sau nocive pentru organism, gastrotehnia incearca sa inlature conceptul de alimentatie gustoasa, dar nesanatoasa, ingrijindu-se de profilaxia bolilor digestive (colecistite, gastrite, colite etc.).</p>
<p>Gastrotehnia traverseaza trei etape in incercarea ei de a asigura alimentelor un drum sanatos pana in &#8220;uzina digestiva&#8221; si cu cat mai putine pierderi nutritionale, pentru a le conserva savoarea si prospetimea.</p>
<p>Operatiile culinare determina modificari in structura fizica si chimica a alimentelor, cu scopul de a le imbunatati gustul, digestibilitatea si valoarea nutritiva. Pofta de mancare si eficienta digestiei depind de mirosul, gustul, precum si de aspectul placut al alimentelor, ceea ce produce stimularea secretiei de suc gastric.</p>
<p><strong>Prospetimea alimentelor</strong> Prima etapa este reprezentata de cercetarea gradului de &#8220;salubritate&#8221; a alimentelor, respectiv cunoasterea semnelor mai importante dupa care se pot deosebi alimentele proaspete de cele alterate.</p>
<p><strong>Prelucrarea alimentelor</strong> Etapa urmatoare este cea a prelucrarii preliminare; ea consta intr-o serie de manopere mecanice, realizate in vederea pregatirii culinare propriu-zise (indepartarea impuritatilor si a partilor alterate, spalarea si inlaturarea componentelor needibile (samburi, coji), taiere in bucati, tocare, razuire, pisare etc.</p>
<p><strong>Tratamentul termic</strong> Ultima etapa este cea a tratamentului termic care, dupa modul de transmitere a energiei calorice, poate fi: frigere, coacere, prajire, inabusire, fierbere.</p>

Si m-am uitat cu ironie,  						gandindu-ma ca nu se pot face prea multe doar cu legume. Am fost surprinsa sa aflu cate boli pot  						preveni, de exemplu. Am citit retete in fata carora mi-a lasat gura apa si m-am hotarat sa incerc si eu!</p>
<p>Dar, mai mult decat atat, datorita acestei carti mi-am facut o obisnuita din a manca zilnic legume, pe care  						le pregatesc in feluri delicioase! O recomand tuturor!</p>
