<div class="text">Se pune codul intr-un castron mare si se acopera cu apa rece. Se lasa la inmuiat timp de 24 de ore, schimband apa de cel putin 5 ori in acest interval.</div>

<div class="text">Se scurge codul si se indeparteaza pielea, folosind un cutit ascutit. Se desface carnea bucatele nici, folosind 2 furculite, dupa care se pune intr-un castron si se lasa deoparte.</div>

<div class="text">Se incinge jumatate din ulei intr-o tigaie mare, neaderenta. Se adauga ceapa si se caleste la foc mediu pana ce s-a inmuiat si s-a facut transparenta. Se scoate ceapa din tigaie si se pune deoparte, cu ulei cu tot, caci va da gust mancarii si nu trebuie aruncat. Se adauga restul de ulei in tigaie si se incinge. Se adauga apoi usturoiul si se caleste 2 minute.</div>

<div class="text">Se adauga rosiile, cu suc cu tot, si se gatesc, la foc mediu, timp de 20 de minute, amestecand ocazional, pana ce mixtura s-a ingrosat.</div>

<div class="text">Intre timp, se pun fulgii de migdale, intr-un singur strat, intr-o tigaie mare. Se prajesc la foc mediu timp de cateva minute, scuturand tigaia si amestecand cu o spatula de lemn sau teflon, astfel ca sa se rumeneasca uniform. Atentie sa nu se arda.</div>

<div class="text">Se adauga peste migdale feliile de ardei iute si maslinele umplute. Se adauga si fulgii de peste, amestecand cu grija. Se gateste 20 de minute, amestecand ocazional, pana ce mixtura este aproape uscata. Se asezoneaza dupa gust, se adauga patrunjel si se mai gateste 2-3 minute. Se orneaza cu patrunjel si se serveste in farfurii calde, alaturi de paine cu coaja crocanta.</div>

<div class="text">Se curata midiile de “barbi”. Se arunca cele care nu se inchid cand sunt ciocanite cu degetul. Se spala in apa rece.</div>

<div class="text">Se toarna apa intr-o tigaie mare, cat sa formeze un strat de 2-3 cm grosime. Se toaca 1 ceapa si se adauga in tigaie, impreuna cu usturoiul. Se da in clocot, apoi se adauga midiile si se acopera tigaia. Se fierb midiile 5-6 minute, scuturand tigaia ocazional. Cand midiile incep sa se deschida, se aleg cele ce raman inchise si apoi se arunca. Se scoate carnea din cochiliile midiilor ramase si se pune deoparte. Se strecoara lichidul in care s-a gatit printr-o sita captusita cu tifon, ca sa indeparteze orice urma de nisip. Se combina lichidul ramas cu zeama de peste, cat sa se obtina o cantitate de 300 ml.</div>

<div class="text">Se deschid scoicile Saint-Jacques: se tin fix in mana, cu partea plata in sus. Se insereaza lama unui cutit printre valvele cochiliei si se rasuceste ca sa deschida cochilia. Se scobeste apoi cu lama cutitului cat sa se desprinda carnea din interiorul cochiliei. Se pastreaza doar muschiul aductir alb si partea portocalie (coralul); restul se arunca, nefiind comestibil. Se spala carnea aleasa sub jet de apa rece ca sa se curete de nisip, apoi se pune intr-un castron.</div>

<div class="text">Se taie fileurile de cod cubulete. Se asezoneaza cu sare si piper si se pun deoparte.</div>

<div class="text">Se taie feliute ceapa ramasa. Se incinge uleiul de masline intr-o tigaie mare si se caleste ceapa 2-3 minute. Se adauga bucatelele de cartof si cimbrul tocat. Se acopera tigaia si se gateste 15 minute, pana cand cartoful este fraged. Se adauga ardeii grasi si se gateste inca 2-3 minute. Se adauga apoi midiile si zeama de peste, impreuna cu vinul si smantana. Se amesteca bine.</div>

<div class="text">Se aduce amestecul pana aproape de punctul de fierbere, apoi se adauga pestele si scoicile Saint-Jacques; se fierb incet 5 minute, apoi se adauga crevetii. Se fierb alte 3-4 minute, pana ce toate fructele de mare sunt facute. Se potriveste de sare si piper. Se serveste mancarea ornata cu fire de cimbru si presarata cu branza rasa, insotita de paine proaspata cu coaja crocanta.</div>

<div class="text">Se prajesc ardeii iuti, fara ulei, intr-o tigaie sau pe un gratar, pana ce coaja lor incepe sa plesneasca si sa se carbonizeze. Se pun intr-o punga de plastic si se inchid bine, astfel ca aburul sa nu iasa afara. Se lasa sa stea 20 de minute.</div>

<div class="text">Intre timp, se sareaza bine pestii pe interior si exterior si se freaca cu mana. Dupa aceea se spala bine sub jet de apa rece, se scurg si se sterg cu prosoape de hartie.</div>

<div class="text">Se scot ardeii din punga si se decojesc. Se taie cotoarele si se curata de seminte. Se toaca pulpa si se pune intr-un mojar; se zdrobeste cu pilonul pana ce se obtine o pasta. Se transfera pasta de ardei intr-un platou mare adanc. Se adauga feliutele de usturoi, oregano si 2 lingurite de sare, apoi sucul de limete si piper, dupa gust. Se amesteca bine.</div>

<div class="text">Se adauga pestii si se tavalesc prin mixtura, ca sa se acopere in mod uniform. Se acopera vasul si se lasa pestii la marinat minim 30 de minute, intorcand pestii o data, la jumatatea acestui interval. Se incinge cuptorul la 200 °C. Se pregatesc 6 foi de folie metalica, indeajuns de mari ca sa poata “ambala” un pastrav. Deasupra lor se intind 6 foi de hartie pergament, de aceeasi dimensiune.</div>

<div class="text">Se pun pastravii peste foaia de hartie pergament, se umezesc cu marinata, apoi se presara cu cate un sfert din cantitatea de fulgi de migdale.</div>

<div class="text">Se aduna deasupra pestilor marginile foii metalice si se strang ca sa “ambaleze” pestele cat mai bine. Se asaza apoi pachetele pe o tava de copt, unul langa celalalt. Se da tava la cuptor 25 de minute. Se pune fiecare pachet pe o farfurie separata, sau se deafac toti mai intai si se servesc neambalati, dupa preferinta. Mancarea merge bine cu o garnitura de cartofi noi sau legume proaspete.</div>
