<div>Se topeste untul intr-o tigaie, la foc mediu. Se mareste flacara si se adauga carnea si se rumeneste rapid pe ambele parti. Se asezoneaza cu sare si piper si se scoate din tigaie.</div>

<div>Se adauga alte 3 linguri de unt in tigaie, se mareste flacara si se adauga ciupercutele. Se gateste, amestecand, timp de 4 minute. Se presara nucsoara si tarhonul si se amesteca bine.</div>

<div class="text">Se prepara umplutura. Se pun stafidele intr-un castron. Se incinge uleiul intr-o tigaie mare, se adauga ceapa si usturoiul si se calesc 5 minute, pana se inmoaie.</div>

<div class="text">Se adauga cuisoarele si scortisoara, apoi carnea de porc tocata. Se gateste, amestecand, pana ce tocatura este rumenite. Se adauga zeama de carne. Se da in clocot, se micsoreaza flacara si se fierbe incet, amestecand frecvent, 20 de minute.</div>

<div class="text">Cat timp fierbe carnea de porc, se decojesc rosiile. Se fac doua taieturi, in cruce, in partea inferioara a rosiilor, dupa care se pun intr-un castron. Se toarna peste ele apa clocotita, cat sa fie acoperite. Se lasa 3 minute, dupa care se scot cu o spumiera si se plonjeaza intr-un castron cu apa rece. Se tin 20 de secunde, apoi se scurg si se decojesc, incepand de la taieturile in cruce unde coaja se desprinde usor.</div>

<div class="text">Se adauga rosiile si migdalele in mixtura de carne tocata, apoi stafidele si vinul. Se amesteca si se gateste pana ce sosul s-a ingrosat. Se lasa sa se raceasca.</div>

<div class="text">Se incalzeste cuptorul la 180 °C. Se deschide pulpa de porc si se asezoneaza umplutura din tigaie cu sare si piper. Se intinde umplutura peste pulpa desfacuta, astfel ca sa se obtina un strat cat mai uniform.</div>

<div class="text">Se ruleaza pulpa cu grija si se leaga cu sfoara. Se cantareste ruloul ca sa se calculeze timpul necesar pentru a fi gatita in cuptor. Se calculeaza 30 de minute la fiecare 500 g, la care se adauga alte 30 de minute. Pentru o pulpa de 1,5 kg, timpul este de 2 ore. Se pune pulpa pe o tava de copt, se asezoneaza cu sare si piper si se gateste conform timpului calculat. Cand este gata, se transfera pe un platou, se acopera lejer cu folie si se lasa 10 minute, la odihna, dupa care se taie feii si se serveste alaturi de cartofi facuti la cuptor.</div>

<div class="text">Se scot ardeii din punga si se decojesc. Se taie cotoarele si se curata de seminte. Se toaca pulpa si se pune intr-un mojar; se zdrobeste cu pilonul pana ce se obtine o pasta. Se transfera pasta de ardei intr-un platou mare adanc. Se adauga feliutele de usturoi, oregano si 2 lingurite de sare, apoi sucul de limete si piper, dupa gust. Se amesteca bine.</div>

<div class="text">Se adauga pestii si se tavalesc prin mixtura, ca sa se acopere in mod uniform. Se acopera vasul si se lasa pestii la marinat minim 30 de minute, intorcand pestii o data, la jumatatea acestui interval. Se incinge cuptorul la 200 °C. Se pregatesc 6 foi de folie metalica, indeajuns de mari ca sa poata “ambala” un pastrav. Deasupra lor se intind 6 foi de hartie pergament, de aceeasi dimensiune.</div>

<div class="text">Se aduna deasupra pestilor marginile foii metalice si se strang ca sa “ambaleze” pestele cat mai bine. Se asaza apoi pachetele pe o tava de copt, unul langa celalalt. Se da tava la cuptor 25 de minute. Se pune fiecare pachet pe o farfurie separata, sau se deafac toti mai intai si se servesc neambalati, dupa preferinta. Mancarea merge bine cu o garnitura de cartofi noi sau legume proaspete.</div>

<div class="indicatii"><span class="rosu">Indicatii</span><br />
Se marineaza bucatile de pui intr-o mixtura formata din: iaurt, sare, jumatate din boiaua iute, jumatate din ghimbir si din usturoi, 2 lingurita de garam masala, jumatate din curcuma. Se amesteca bine ingredientele si se lasa carnea la marinat cca. 1 ora.<br />
Orezul se spala si se lasa la inmuiat 30 minute.<br />
Se da in clocot apa, se adauga 2 linguri de garam masala, frunzele de dafin si sare si se fierbe in acest amestec orezul pana ce este aproape facut. Se scurge apoi si se pune deoparte.<br />
Se incalzeste uleiul intr-o tigaie. Se adauga 2 linguri de garam masala si se lasa 1 minut, amestecand. Se adauga ceapa si se soteaza pana se rumeneste un pic. Se adauga apoi restul de ghimbir si de usturoi, pudra de coriandru, curcuma, boiaua, 1 lingurita de garam masala si rosiile tocate. Se gatesc 5 minute. Se adauga puiul marinat si se gateste pana ce este fraged.<br />
Sofranul se dizolva in lapte cald si se pune deoparte.<br />
Se asaza straturi succesive de carne si orez. Se presara sofranul dizolvat, restul de garam masala, frunzele de menta, ceapa rumenita si unt intre straturi si deasupra (on top). Deasupra se adauga si apa de trandafiri.<br />
Se acopera cu folie de aluminiu. Se intoduce in cuptorul incalzit in prealabil, timp de 10-12 minute.</div>

Se fierbe scortisoara cu 2 cani de supa (apa) intr-un vas acoperit, pana cand cantitatea de lichid se reduce la jumatate. Se strecoara.<br />
Se fierbe orezul conform indicatiilor de pe ambalaj.<br />
Se incinge intr-un wok untul, se adauga faina amestecandu-se bine, apoi se adauga curry amestecand continuu ca sa nu se prinda.<br />
Se adauga restul de supa (apa), amestecand in continuare.<br />
Dupa ce fierbe se adauga morcovul, ardeiul gras, cartofii si merele si se lasa sa fiarba la foc mic, cu vasul acoperit.<br />
Separat, intr-un alt vas se inabuse in ulei  bucatile de carne, ceapa si usturoiul.<br />
Dupa ce sunt patrunse bine, se adauga semintele macinate de anason si fenicul; se soteaza inca 1-2 minute, amestecand continuu. Se dau deoparte.<br />
Cand morcovul si cartofii sunt aproape fierti, se adauga supa cu scortisoara, carnea cu ceapa, condimente si usturoi, se lasa la fiert la foc mic inca cateva minute, pana cand toate ingredientele sunt patrunse. Se orneaza cu frunze de menta proaspata si se serveste peste orez.</div>

<div><strong>Se spala bine cartofii si dovleceii, se taie în felii subtiri cu tot cu coaja. Feliile de cartofi se oparesc cinci minute într-o oala cu apa clocotita, se scurg bine. Se freaca bine brînza cu smîntîna. Se încalzeste cuptorul la 210°C Se taie patru patrate mari de hîrtie pergament, se ung la mijloc cu o lingura de amestec smîntîna+Boursin, se acopera cu cîteva felii de cartof si cîteva de dovlecel, deasupra se pun fileurile de somon sarate si piperate, peste ele se repartizeaza restul de felii de dovlecel si cartof, în sfîrsit se repartizeaza peste ele restul de amestec Boursin+smîntîna si se presara cu boabe de piper roz. Se înfasoara totul în hîrtia pergament si se da la cuptor 10 minute. Se serveste cald.</strong></div>

<h4>Se serveste sushi cu un mic castronel de shoyu (sos de soia japonez) ca dip, extra wasabi pentru cei care prefera gustul iute si cu felii de gari (ghimbir japonez murat) pentru a curata palatul gurii intre bucatile de sushi. Sushi se poate manca folosind mana sau betisoare.</h4>

Se fac trei incizii in muschiul file, pe lungime, avand grija sa nu se ajunga cu taietura la margini.<br />
Se amesteca carnea tocata cu jambonul, ardeiul gras, maslinele si oul fiert. Se adauga oul batut si brandy. Se sareaza (nu prea mult, caci maslinele sunt deja sarate) si se indeasa umplutura in inciziile facute in bucata de muschi; se leaga apoi cu sfoara, nu prea strans, ca sa nu iasa afara umplutura.<br />
Se asaza muschiul pe o tava de cuptor, se sareaza si se stropeste cu ulei fierbinte. Se da la cuptor, la 180C, timp de 30-40 de minute, udand-o frecvent cu sosul din tava. Daca este nevoie, se adauga putin vin rosu sau apa, ca sa nu iasa prea uscata.<br />
Se scoate, se lasa sa se raceasca si se desfac sforile.<br />
Carnea se serveste fierbinte, taiata felii subtiri, alaturi de sos din tava; se poate servi si rece, cu maioneza.</div>
